As the son of immigrant parents who built their own businesses from nothing, Jhonatan always aspired to build something of his own. He went to college, earned his degrees, and became a CPA — honoring the sacrifices his parents made when they came to this country at a young age, starting from zero, to build a better life for him. A professional career was their goal for him, and it was one he gave his all.
But once in the corporate world, he realized it didn’t fulfill him. His goals and dreams were much bigger — not about the money, but about what he could create. He had zero restaurant experience. But when the opportunity to launch a restaurant presented itself, he saw a chance to build something real around food.
Food has always been the center of Mexican family life — the dishes that bring back childhood memories, the reason the whole extended family gathers together. It’s not just about eating. It’s about the people you share the meal with. That truth inspired Jhonatan to bring something genuine to Austin. He asked himself: what could he offer that was truly unique? There were hundreds of taco spots — but none of them were putting queso first. That’s how Kesos was born.
